Lovely Christmas Things

was just thinking today of all the things i love about Christmas.....

how well red and green go together
green Christmas trees
candied apples
sugar cookies
and...........

FRUITCAKE!

yep, i'm one of those nutty people who actually like fruitcake. I think it's a developed taste, cultivated over the years by the early introduction of my mother's Cherry Blinks cookies that she always made for Christmas.
yep, visions of red and green cherries surrounded by crushed Wheaties cereal covering a yummy cookie loaded with raisins and nuts---my early introduction to fruitcake! LOL

here's the recipe:

Cherry Blinks

1/3 C. shortening
1/2 C. sugar
1 egg
1 1/2 T milk
1tsp. vanilla

measure the above into a mixing bowl and beat to combine.
measure and add:

1 C flour
1/2 tsp. baking powder
1/4tsp soda
1/4 tsp salt
1/2 C. raisins
1/2 cup chopped walnuts

beat these ingredients into the above cookie mixture.
form the cookie mixture into small balls and roll in:

1 1/2 C. dry crushed Wheaties cereal

place on a greased cookie sheet, and press
1/2 of a marchino cherry (cut side down) into each cookie before baking.

bake at 350 degrees for about 10 min or so, until the underside is a light brown and the cookie is set.
